Leftover pork panini
Jan. 4th, 2010 07:01 pmThere's been a lot of pork on sale lately, so our freezer is full of it. But using it up after the first yummy crock-pot roast can be a challenge. So, how to make a sandwich that doesn't make you cringe at the thought of school lunches:
Cubed pork
Sliced veggies - green and red peppers, mushrooms if you have them, onions, a tomato or two
Chopped garlic
Olive oil
salt, pepper, mayonnaise
Grill or stir-fry the veggies in the olive oil with the garlic. When everything is nicely limp and slightly brown at the edges, add the tomatoes, cook another minute or two, and fill the bread of your choice with your toppings. We used tortillas; pitas or panini buns would work beautifully.
And lunch for tomorrow is ready.
